Who doesn't love s'mores? But a campfire is not always available, so how about a great way to make s'mores that is also a cool and refreshing dessert for the summer? Here's my recipe for s'mores ice cream pie!
I like to make this dessert in a springform pan, so it is easy to remove the sides and slice through the ice cream pie.
First I prepare the graham cracker crust, and using the back of a spoon, press into the bottom and up the sides of the pan.
Next I take the chocolate ice cream out of the freezer to soften while I prepare the homemade hot fudge sauce. You can grab the recipe for my homemade hot fudge here!
After layering the crust, fudge, ice cream, and more fudge (allowing the pie to freeze between each layer), I top it off with mini marshmallows and place the pie under the broiler for a few minutes until the top turns golden brown.
I prefer to broil my marshmallows in a toaster oven because I feel that it is faster and easier to control how fast it is “toasting.” Return the cake to the freezer to firm up for about 30 minutes before serving.
S'mores Ice Cream Pie Recipe:
- For the Crust:
- 1¼ cups graham cracker crumbs
- 5 T melted butter
- For the Pie:

- 1 Gallon Chocolate Ice Cream
- 1½ cups mini marshmallows
- Mix the graham cracker crumbs with the melted butter and press into the bottom of a springform pan using the back of a spoon- covering the bottom and 1 inch up the sides with the crust mixture. Place the pan in the freezer, and freeze until solid- about 30 minutes.
- Spread half of the hot fudge sauce over the crust and refreeze. Meanwhile, soften the chocolate ice cream on the counter for 30 minutes.
- Spread the chocolate ice cream on top of the hot fudge until smooth. Freeze for 30 minutes.
- Add the remaining hot fudge sauce over the chocolate ice cream and freeze until firm.
- Place the mini marshmallows on top of the ice cream cake and preheat your broiler. Place your ice cream pie under the broiler for 1 to 2 minutes until marshmallows are lightly toasted and then return the cake to the freezer to firm up for about 30 minutes before serving.
