I promise you- these at some of the best homemade Belgian waffles you will ever eat!

Ingredients
1 cup cake flour
½ cup all-purpose flour
2 tablespoons sugar
1½ teaspoons baking powder
¾ teaspoon baking soda
1½ cups ( a 16 oz. container) of sour cream
3 large eggs, separated
3 tablespoons of butter, melted
1 teaspoon of vanilla extract
Instructions
Sift together in a medium bowl both of the flours, sugar, baking powder, and baking soda.
In another medium-size bowl whisk together the sour cream, 3 egg yolks, the melted butter, and the vanilla extract. Next pour the dry ingredients into the bowl with the sour cream mixture, and stir a few times to make a quick and lumpy batter.
Using your electric mixer beat the 3 egg whites until stiff peaks form. Using a rubber spatula, fold the egg whites into the batter being careful not to deflate it.
Preheat your waffle iron. (I always spray my waffle irons with a little bit of cooking spray so that the waffles won’t stick while cooking.) Add about a ⅓ cup of batter to each section of your waffle iron, and cook for the time as indicated. Serve warm with 100% maple syrup or a berry topping!
