S'Mores Ice Cream Pie!
 
 
Who doesn't love s'mores? But a campfire is not always available, so here's a great way to make s'mores that is also a cool and refreshing dessert for the summer!

  • For the Crust:
  • 1¼ cups graham cracker crumbs
  • 5 T melted butter
  • For the Pie:
  • Homemade Hot Fudge (https://www.momof6.com/food-kids-will-eat/homemade-hot-fudge-recipe/)
  • 1 Gallon Chocolate Ice Cream
  • 1½ cups mini marshmallows
Instructions
  1. Mix the graham cracker crumbs with the melted butter and press into the bottom of a springform pan using the back of a spoon- covering the bottom and 1 inch up the sides with the crust mixture. Place the pan in the freezer, and freeze until solid- about 30 minutes.
  2. Spread half of the hot fudge sauce over the crust and refreeze. Meanwhile, soften the chocolate ice cream on the counter for 30 minutes.
  3. Spread the chocolate ice cream on top of the hot fudge until smooth. Freeze for 30 minutes.
  4. Add the remaining hot fudge sauce over the chocolate ice cream and freeze until firm.
  5. Place the mini marshmallows on top of the ice cream cake and preheat your broiler. Place your ice cream pie under the broiler for 1 to 2 minutes until marshmallows are lightly toasted and then return the cake to the freezer to firm up for about 30 minutes before serving.
