Ingredients
  • 2 cups of all-purpose flour
  • 1 teaspoon salt
  • 1 cup butter, but into slices
  • 2 Tablespoons ice water
  • Strawberry jelly or jam (or flavor of your choice)
  • white of one egg
Instructions
  1. In the bowl of a food processor, mix the flour and salt together using quick pulses. Add in the butter slices and pulse until the butter is incorporated in pea-sized pieces. Drizzle in the ice water and continue to use on/off pulses just until the dough comes together in the bowl,
  2. Shape the dough into a disc, wrap in plastic and chill for 1-2 hours.
  3. Roll the dough out on a floured surface, and using the back of the mini pie mold, cut the dough into rectangle shapes.
  4. Take one rectangle and place it into the non-fluted side of the pie mold. Brush on the egg white wash on all of the edges.
  5. Add 2-3 teaspoons of jelly on top of the dough, and then place another rectangle on top, and then close the mold and press together to seal the edges.
  6. Move the pop tart to a parchment-lined baking sheet, and cut slits into the top to vent.
  7. Bake in a 375-degree oven for 20 minutes, until golden brown.
