This is a great recipe that you can make while on a road trip and staying in a condo or rental home, or even while camping! There are some steps that you'll want to prep ahead of time before you leave home, and then there are ingredients that you can buy at the grocery store wherever you are traveling. You can marinate the chicken in the morning before you head off for the day's adventures, and then grill the chicken and roasted potatoes in the evening. Here are the details on how to prepare a delicious meal of Mediterranean Grilled Chicken with Seasoned Roasted Potatoes:
Prep At Home:
For the Mediterranean Grilled Chicken marinade you'll need:
1/2 cup of olive oil 1/3 cup of balsamic vinegar Spice packet for chicken:

I pre-measure the olive oils and balsamic vinegar and put them into Ziploc plastic containers. Prepare each of the spice packets place them into small Ziploc bags.

Preparing the Mediterranean Grilled Chicken with Seasoned Roasted Potatoes:
In a bowl, combine the olive oil, balsamic vinegar, spice packet, the tomato and onion (both chopped). Place in a Ziploc bag, and then add in the chicken. Shake the bag until the chicken is evenly coated and place in the refrigerator or car cooler to keep cold until you're ready to grill.
Cut your potatoes into small 1/2 inch-sized cubes and put into a Ziploc bag. Pour the 2 tablespoons of olive oil and shake to coat the potatoes. Add the potato seasoning and shake vigorously until well coated. Place the potatoes on a baking sheet covered with nonstick foil and bake at 400° for 45 minutes until tender. Alternatively these potatoes taste delicious when roasted on a iron skillet over a campfire or even on the barbecue grill. Just continue to turn them so that they brown evenly on all sides.
Grill your chicken breasts over a medium hot grill, until cooked through. While the chicken is cooking, pour the remaining marinade into a saucepan and bring to a boil on the stovetop. Continue boiling for 5 minutes. Serve grilled chicken with cooked marinade spooned on top as a sauce.
