At our house we serve chicken for dinner at least once, but usually twice a week. I like that my kids get a good healthy dose of protein with dinner and that I can stretch my grocery budget by stocking up on chicken breasts when they are on sale for 40% off! Double win! My Mom went to a potluck brunch a few years back, and a friend of hers brought along this terrific baked chicken dish topped with golden melty muenster cheese. Mom shared the recipe with me, and now it's become a family favorite! So here's the recipe for Baked Chicken with Muenster Cheese!
Baked Chicken with Muenster Cheese
3 eggs, beaten 3/4 cup bread crumbs (plain or Italian style) 8 skinless, boneless thin-sliced chicken breasts 1 cup boiling water 4 chicken bouillon cubes 8 slices muenster cheese a squeeze of lemon juice sliced mushrooms (optional)Place the 4 bouillon cubes in the boiling water and allow to dissolve. Dip chicken breasts in the beaten eggs, coating both sides, and then dip in the bread crumbs to coat evenly, shaking off the excess.
Brown chicken breasts in butter until beautifully golden on both sides (I add butter to the pan as I turn the chicken over).
Please browned chicken in a 9×13 pan and top with a slice of Muenster cheese. Drizzle the bouillon stock and then squeeze a bit of lemon juice on top. Bake at 350 degrees for 20 minutes.
Serve with steamed rice, a salad, and some homemade bread! Enjoy!
