I love potatoes- roasted, mashed, scalloped, fried, baked, grilled… I could go on and on (and sound like the shrimp-guy in Forrest Gump!). But if you want a really yummy potato from scratch- you usually need to plan in advance and get started more than an hour before serving. That is…. unless you cheat a little and use the microwave to get a jump-start on the baking process! Last weekend, I wanted to find a quick but delicious potato to go with the chicken madeira that I was making…. and after a little searching on Pinterest for inspiration, and then making a few modifications to speed things up…. this is what I created:
30 Minute Loaded Smashed Potatoes!(serves 8) 10-12 small to medium Yukon Gold potatoes 4 slices of bacon, cooked and crumbled into small bites olive oil 1/2 cup finely shredded cheddar cheese 3/4 cup sour cream
Wash potatoes well, and then prick each potato with a fork twice (so steam can escape), and place on a paper towel in the microwave. Cook for 10 minutes on high and then check for doneness (they should be soft and cooked through to the center). Continue cooking in 5 minute intervals until all potato are done, removing them as they are individually ready. In the meantime, preheat your oven to Broil.
Place potatoes on a non-stick foil lined sheet and using a potato masher, press down until they are smashed. (Press down somewhat gently at first, you don't want them smashed to smithereens as I did with my first one!) Brush each smashed potato with olive oil (which will crisp the outside) and sprinkle a total of 1/3 cup of shredded cheddar on top of each potato.
Broil in oven for 5 minutes until cheese has melted and skin has browned slightly. Meanwhile mix together sour cream, crumbled bacon, and remaining cheddar cheese.
These are so yummy- and in just 30 minutes you have potatoes that could be served in a restaurant they are so good!

Here’s our menu plan for the week ahead- and lucky for me- we have lots of special family activities coming up later in the week, which means that I get a few nights off from cooking!

Wednesday: Taco Dumplings
Thursday: We're going out for a special anniversary dinner for my in-laws 50th wedding anniversary!
Friday: Dining Out
Saturday: We'll be at a cousin's wedding!
Sunday: Delivery Pizza
