Does this happen at your house? You are craving a special sweet treat- so while the kids are in school you go to the trouble to make up a pan of your extra chewy, fudgy brownies with caramel on top. You leave that pan on your kitchen counter to cool, and then proceed to run about a million errands from the time the kids get home until it's time to cook dinner…. and right about the time you are stirring the pasta sauce on the stovetop, you glance over at the pan of brownies that you made earlier- the ones you made because you were the one craving the treat– and the pan is nearly empty?!! Just a few sad-looking crumbs remain?
Yeah- it happens to me too.
My kids can inhale baked treats like nobody's business! (I wonder where they get that from?) But there are definitely times when I want to indulge myself just a bit- and not necessarily share! (Selfish or self-indulgence… you be the judge!) Which is why I LOVE mug cakes! They are super simple to make (less than 5 minutes), they don't make a mess, and if you enjoy them during the day- the evidence is gone before the kids even get home!
Moms deserve these indulgences once in awhile! We've earned it!
This recipe is for a decadent, moist vanilla cake that is spiked with a hint of rich coffee taste. It's one of the reasons I always keep Folgers instant coffee on hand!
Instant Coffee tastes amazing- whether as a drink (you have to try my Mocha Coffee recipe!) or used in a recipe! It's quick and easy, smells so yummy, and is an easy way to add richness to your day! I love it! (You can find more Folgers Recipes here!)
- 6 T all-purpose flour
- 2 T sugar
- 1 t Folger's Instant Coffee
- 1/2 t baking powder
- pinch of salt
- 6 T skim milk
- 1 T vanilla extract
- 2 T melted butter
- In a small bowl, whisk together the 5 dry ingredients until blended.
- In a glass measuring cup- melt the 2 T butter in the microwave, then add in the milk and vanilla extract.
- Pour the milk mixture into the dry ingredients and stir until the batter is smooth. Pour batter into a microwave-safe mug.
- Microwave on high for 2 minutes.
- Add a dollop of whipped cream on top for added deliciousness!
The cake comes out so moist- and if you add a dollop of whipped cream to the top- you get a delicious creamy layer too!
