During the week I love to prepare dishes that are simple to make as well as substantial (to fill up teen bellies!), and I consider it a bonus if they can be prepped or assembled ahead of time! Which is why this recipe for Potatoes Anna is a favorite family side dish!
There are only four simple ingredients in this dish- butter, salt & pepper, and potatoes.
And the most time-consuming part of the recipe is the washing and peeling of the potatoes, so I knock this out in the morning while the kids are eating breakfast.
Then I place the uncut potatoes in a bowl with enough water to cover them and place the bowl in the fridge until I am ready to assemble the dish. (I use about 7-8 large potatoes and they can be Yukon gold or a basic russet).
About 90 minutes before dinner, while the kids are doing their homework, I will cut the potatoes into thin slices.
Melt 2 Tablespoons of butter in a large deep pan on the stove. Once the butter is melted, turn off the heat.
Place potatoes in a single layer on the bottom of the pan, overlapping them slightly.
Melt another 2 Tablespoons of butter (I use a microwave for this), and drizzle a bit of melted butter on top of this layer. Sprinkle some salt and pepper on top as well.
Continue adding layers, drizzling the butter, and sprinkling with salt and pepper until all of your potatoes are in the pan.
When you get to the top layer. Press down on the potatoes a bit. You want them really compacted in there!
Cover the top of the pan with foil, and place in a preheated 400-degree oven for 30 minutes. Remove the foil and bake for another 20-30 minutes until the top begins to crisp slightly.
Allow the potatoes to cool for 10 minutes and then place a large serving plate on top and flip them over to invert your Potatoes Anna!
You'll be rewarded with all of the browned crunchy goodness on the bottom of the pan!
